About this Recipe
By: Anna Burrows This recipe uses green beans and cabbage to help us with the 5 a day. The coconut milk used makes it very tasty and filling.
Ingredients
200g chopped fresh cabbage
200g of soaked rice noodles
1 small chopped onion
A handful of green beans
Tin of coconut milk
Turmeric sprinkle 1tsp.
1 tbsp. of ground coriander
1/2 tsp of cumin
Cardamoms 4 or 5
Dry methi leaves 1tbsp.
2 medium cloves of squashed garlic
1/2 tbsp. of olive oil
1 tbsp. of ginger fresh grated
Fresh coriander, chopped, handful
Half a cup of dashi stock or a vegetable stock (low salt, no MSG)
Step by Step Instructions
Step 1
Fry onion and garlic till soft, add spices, fry till aromatic.
Step 2
After few minutes add coconut milk, dashi stock, cabbage, green beans..
Step 3
Bring to boil simmer for 15 min, add noodles, bring to boil again then, simmer for another few minutes till noodles are soft.
Step 4
This will make about 4 big portions. Freeze the rest of the portions, to be used for your quick lunch when there is no time to cook. Serve in bowls sprinkled with freshly chopped coriander
